You need an extra income, and the idea of selling something at a flea market appeals to you. Of course your
next problem is deciding what to sell. Try potato salad. It is not out of the ordinary to see visitors to flea
markets walking around with snacks of some sort or another, so why not a yummy salad, bought from
you?
Just the idea may get you thinking along another line, that is great, but here we are going to tell you how to
make a great Potato Salad that will have people coming back for more, and even placing orders to make sure they get
from you at the next flea-market, before you sell out.
With any food product, packaging is important. Packaging for storage, presentation and delivery are crucial to get your product to your client in the best possible condition. Decide on how you will be storing and displaying your salad before you start, to be sure everything is in place.
To make a great potato salad, you will need the following:

9 to 12 medium Potatoes. Use BP1 or Mondial. Do not use Up-to-date, ever! Up-to-date
is best for making good chips, not potato salad.

About 500ml Salad dressing. Use wonder whirl. Most fast-food franchises do, and its really yummy.

2 medium Onions. Finely chopped.

4 Eggs. Hard boiled.

Half teaspoon Parsley. Dry or fresh. Add a touch of basil even.

Black Pepper

Smidgin of crushed garlic.

Tablespoon tomato sauce.

Third of a cup of milk

Salt
Wow! Some list, but bear with me, it all comes together quite easily, and its gonna make you some good money!

Peel the potatoes. Put into a pot of water, with a level teaspoon of salt. Turn the heat up, and turn up the
volume of your favourite dance music while you're busy.

When the water start boiling, put the eggs in with the potatoes, and leave them in there for 5 or 6 minutes.

While the potatoes are doing their thing, tackle those onions. Peel them, run cold water over them, and then chop them up, really fine. Chopped onion into a bowl, to keep it tidy.

Mix the garlic and the tomato sauce in a bowl.

The eggs should be done by now. Run cold water over them to cool them down so that you can peel them. Once peeled, cut them in half length-wise.

Remove the yolk, and toss the yolk in with the tomato sauce garlic stuff. Put the rest of the egg away for now.

Whip the tomato sauce garlic yolk stuff like mad, so that its smoooooth.

When the potatoes are cooked, NOT BEFORE, remove them from the stove, drain them, and run cold water into the pot. Drain it off again. Leave to cool.

Put about half the salad dressing into a large bowl. Add the milk to it, and mix it up.

Add the potatoes to the bowl. Add the rest of the salad dressing. Mix it slowly, so that the potatoes are well coated with salad dressing.

Smooth the potato salad a bit, so that its kinda level.

Spoon portions of the tomato sauce garlic yolk stuff into the eggs.

Sprinkle the salad lightly with parsley.

Grind pepper very lightly over the salad.

Place the egg halves onto the salad, approximately in their portions.

Refrigerate, and then sell.
This recipe will make 6 very generous portions, 8 good portions, or 12 nice portions. If making 12 portions, use another 2 eggs. You could even put the salad into individual containers prior to refrigeration and selling.
